Gluten-Free Blueberry Muffins
1 ¾ C. rice flour
½ C. sugar
1 ½ tsp. Salt
1 ¾ C. Water
2 eggs
½ C. oil
2 C. baby rice cereal
1 Tbsp. + 2 tsp. baking powder
1-2 C. blueberries



Combine flour, sugar and salt. Add water, eggs and oil, and mix well. Stir together rice cereal and baking powder, and add to the above mixture. Mix well and fold in blueberries. Fill sprayed or papered muffin tins until almost full, and bake at 400 degrees until golden, 20-25 minutes.
