Gluten-Free Summer Pasta Salad

1 pkg. Namaste Pasta Pisavera Pasta
5-6 tbsp. olive oil
1/3 C. sun dried tomato, chopped
½ C. artichoke hearts, coarsely chopped
½ C. sliced black and/or green olives
¼ C. finely chopped red onions
½ C. chopped green pepper

Optional: handful of cilantro or parsley


Set aside Pasta Pisavera seasoning packet. Cook the pasta in boiling salted water until done, about 7-10 minutes. Drain and rinse briefly in cold water. Place pasta in serving bowl add 1 tablespoon of olive oil, and toss. Sprinkle Pasta Pisavera seasoning packet over pasta, add remaining ingredients including olive oil, and toss gently. Garnish with fresh parsley or cilantro if desired. Can be served room temperature or chilled.
