Best Leftover Gluten-Free Green Chili Soupa Meal
4 Tbsp. Cream of Chicken-less Soup
1 15 oz. can chicken broth
1 15 oz. can corn
1 4 oz. can died green chilies
3 Tbsp. salsa (more if desired)
1 bag shredded colby or jack cheese
2 Tbsp. Gluten-Free Onion soup Mix
1 large onion, chopped
4 C. turkey, chopped
Salt, pepper, garlic and cumin to taste
Corn tortillas (torn into pieces)

Cook all ingredients, except cheese and tortillas, in a saucepan for 2-3 hours. Preheat oven to 350 degrees. In a large casserole dish; spread a small amount of the meat mixture of the bottom to prevent sticking. Layer corn tortillas over meat mixture; then layer shredded cheese, then repeat. Finish with cheese. Cover with foil and bake for 1 our. Allow to sit 10 minutes before serving with sour cream and tortilla chips. Yum!
