Gluten-Free Salad Sandwich
2 slices GF bread of your choice
½ tsp. mayonnaise
¼ firm tomato
¼ onion
3 mushrooms, thinly sliced
lettuce leaves
6 slices cucumbers
1 kosher dill pickle
¼ sliced green pepper
1/8 large apple

Wash all ingredients and slice as thin as you possibly can. Spread the mayonnaise as thin as possible on both pieces of bread. On one side lay 3 slices tomato and on the other 3 slices of onion. This allows the juice to run into the mayonnaise. Then start building your sandwich. Add the mushrooms on one side, lettuce and cucumbers on the other. Now add the pickle on one side, and the green pepper on the other. Place the apple slices over the green peppers. Put sandwich together, cut and enjoy.
