½ C. chunky peanut butter
½ C. honey
½ C. chopped nuts
½ tsp. vanilla
½ tsp. cinnamon
2 C. Erewhon rice cereal
Mix peanut butter, honey, nuts, vanilla and cinnamon together in a bowl. Add cereal and stir gently until the cereal is well coated. Place a dish of water near the bowl. Using wet hands form the mixture into walnut sized balls and place them on a lightly oiled dish or on waxed paper.
Variations:
Add your favorite dried fruit to the mixture before forming into balls.
Roll snacks in coconut or chopped nuts.
