Gluten-Free Party Balls

1C. raw almonds, ground
2 Tbsp. pine nuts or cashews or madcadamias, ground
1/2 C. dried shredded coconut
1/4 C. raw almond butter
1/4 C. pure honey or syrup, or more to hold balls together

CAROB BALLS: Add 1 C. raw carob powder + 1/4 C. water

Combine the nuts, coconut, and carob powder, if using, in a food processor with an S-blade. Mix the almond butter, sweetener, and water if needed, separately, and then add to the dry ingredients. The dough should be fairly dry, but wet enough to hold together when rolled into balls. Roll each ball in carob powder, or finely ground coconut or almonds. Refrigerate several hours, until firm
