Serves 4 - 6
Portabella & Pepper Burgers:
6 portabella mushroom caps
2 large bell peppers (color of choice)
3 Tbsp. olive oil
6 slices mozzarella cheese
6 whole grain burger buns
Clean mushroom caps and place in a 9 x 13 baking dish. Sprinkle half the olive oil over the mushroom caps. Clean peppers and cut each into 4 large wedges, removing seeds and pith. Add to baking dish with mushrooms. Sprinkle remaining olive oil over the peppers. Preheat the grill to medium high - use indirect heat. Add the peppers to the grill - let cook and char on one side for about 3 minutes. Add the mushrooms to the grill. Heat until all is hot throughout. Remove portabella burgers to the baking dish so bottom of cap is facing up - place piece of cheese over each cap and top with pepper wedge. Serve on buns with condiments of choice.
Heirloom Salad:
Slice heirloom tomatoes and cucumbers; arrange on plate. Top with a splash of balsamic or red wine vinegar.
