TASTY TURKEY CHILI MEAL
Serves 4

Tasty Turkey Chili:
1 lb. Ground Chicken
1/4 C. sweet red onion (chopped)
1/4 C. carrots (shredded or chopped)
1/4 C. celery (chopped fine)
1 small red or green bell pepper (chopped)
3/4 C. squash (zucchini, crookneck, patty pan, etc.)
1 15 oz. can black beans (rinsed and drained)
1 14.5 oz. can crushed tomatoes
1-2 teaspoons chili powder
1/4 tsp. cumin (or more to taste)
1 dash cinnamon
Salt and pepper (to taste)

In a heavy Dutch oven or your favorite chili pot: over medium heat, brown ground turkey with onions and spices. Add chopped veggies and beans, and cook over medium heat until tender. Add crushed tomatoes; reduce heat and allow to simmer for 15 minutes. Remove from heat and allow to cool a bit prior to serving. Can be made 1-2 days ahead of time. Top with grated cheese, chopped avocados, chopped tomatoes or sour cream (all optional according to taste).

Triple Berry Granola Crisp:
1 10 oz. bag Cascadian FarmŽ frozen organic blueberries
1 10 oz. bag Cascadian FarmŽ frozen organic strawberries
1 10 oz. bag Cascadian FarmŽ frozen organic raspberries
1/4 C. sugar
2 Tbsp. all-purpose flour
1 ½ C. Cascadian FarmŽ organic oats & honey granola
Whipped cream (optional)

Heat oven to 375°F. In ungreased 8-inch square (2-quart) glass baking dish, mix frozen berries, sugar and flour until fruit is coated. Bake 20 minutes. Stir. Sprinkle with granola. Bake 15 to 20 minutes longer or until light golden brown and bubbly. Let stand 5 to 10 minutes before serving. Serve warm with ice cream.
