LADIES TEA
Serves 6-8

Curry Puffs with Chicken Salad:
Curry Puffs:
1/4 C. butter
1/2 Tsp. curry powder
1/4 tsp. sea salt
1/4 tsp. cayenne pepper
1/2 C. water
1/2 C. flour
4 large eggs
3/4 C. grated Parmesan cheese
2 tsp. fresh chives, minced

Pre-heat oven to 400 degrees. Mix together flour, salt, curry powder and cayenne pepper, set aside. Melt butter in a saucepan. Add water and heat to boiling. Add flour mixture all at once. Cook over medium heat, stirring constantly, until mixture leaves the sides of the pan and forms a stiff ball. Remove from heat. Blend in eggs one at a time, beating vigorously after each addition. Stir in Parmesan cheese and chives. Use a teaspoon to place small rounds of dough on a greased baking sheet. Bake 15-18 minutes until golden brown and puffy. Turn off oven, remove and pierce puffs with the tip of a sharp knife; place back in oven and let sit for 5 minutes in the residual heat. (Oven should be off but still hot)

Chicken Salad:
3 chicken breasts
1/2 C. celery, diced
1/4 C. red onion, minced
1/2 C. red grapes, cut in half
3/4 C. mayonnaise
2 Tbsp. fresh chives, minced

Pre-heat oven to 375 degrees. Place chicken breasts on a baking sheet, season with salt and pepper. Bake until cooked through, 12-15 minutes. Cool and then cut into small cubes. In mixing bowl combine the chicken, celery, red onion, grapes and chives. Stir in the mayonnaise, season to taste with salt and pepper. Slice curry puffs in half, place a large Tbsp. of chicken salad in center of each to serve.

Smoked Turkey Tea Sandwiches:
1/2 C. mayonnaise
1/4 C. apricot jam
1/2 lb. Applegate smoked turkey
4 slices swiss cheese
1 C. fresh arugula
8 slices bread, crusts removed

In a small bowl mix together the mayonnaise and jam. Lay 4 pieces of bread on the counter, top with the turkey, then the cheese, then the arugula. Spread the apricot mayonnaise on the remaining 4 slices of bread then place them on top of the sandwiches. Cut each sandwich in half diagonally, then in half again to make 16 total triangle shaped tea sandwiches.
