Serves 24
Chicken Kabobs:
4 chicken breasts, cut into chunks
2 small zucchini, sliced 1/4 inch thick
1 medium red onion, peeled and cut into chunks
18 cherry tomatoes
18 button mushrooms, stems removed
2 green bell peppers, cored, seeded and cut into chunks
BBQ sauce
12 wooden skewers
Place chicken and vegetables onto the wooden skewers alternating colors for a festive look. Keep chilled until ready to grill. Brush with BBQ sauce just before grilling. Serve with additional BBQ sauce on the side.
Grilled Burgers and Brats:
3 lbs. Bubba’s ground beef
12 Valley Natural Foods brats
1 head romaine lettuce
8 tomatoes, thinly sliced
4 red onions, thinly sliced
12 hamburger buns
12 hotdog buns
Ketchup
Mustard
Pickles
Form ground beef into 12 burgers. Keep chilled until ready to grill. Wash lettuce, drain and break leaves in half. Place on a platter along with the sliced tomatoes and onion. Keep chilled until ready to serve. Heat grill, cook the kabobs, burgers and brats just before ready to serve. Place condiments on table for self service.
Chocolate Chip Brownies:
4 C. butter, melted
8 C. organic cane sugar
16 eggs
6 tsp. baking powder
3 C. cocoa powder
7 C. flour
2 C. chocolate chips
In large mixing bowl combine the melted butter, sugar, eggs, baking powder, cocoa, and chocolate chips. Fold in the flour. Place batter in greased and floured baking pans. Bake at 350 degrees 12-15 minutes or until a pierced knife comes out clean. Be careful not to over bake. Cut into 24 portions.
