GRILLED CHICKEN SKEWERS
Serves 4

Grilled Chicken Skewers:
1 red bell pepper, cut in medium chunks
1 green bell pepper, cut in medium chunks
1 small red onion, peeled, cut into medium chunks
4 chicken breast halves, rinsed and cut into chunks
1/4 C. olive oil
1 Tbsp. fresh lemon juice
1 tsp. fresh thyme leaves
Sea salt and pepper
Skewers for grilling

Pre-heat grill. Thread the bell peppers, onion and chicken onto the skewers. In a small bowl whisk together the olive oil, lemon juice, thyme, sea salt and fresh ground pepper. Brush onto the skewers just before grilling.

Potato Salad with Hidden Stream Farm Bacon:
2 lbs. baby red potatoes, diced
1/4 lb. Hidden Stream Farm bacon
3/4 C. mayonnaise plus 2 tbsp.
1 Tbsp. BBQ sauce
1 Tbsp. dijon mustard
1 Tbsp. sherry vinegar
1/2 C. celery, diced
1/4 C. red onion, minced
3 Tbsp. Italian parsely, chopped
2 tsp. fresh tarragon, chopped

Place potatoes in a large pot and cover with water. Place lid on top and bring to a boil. Reduce heat and simmer until potatoes are tender, 10-12 minutes. Drain. In a skillet, cook the bacon until golden brown and crisp. Drain on paper towels and crumble. In a large mixing bowl, combine the mayonnaise, BBQ sauce, mustard, vinegar, celery, onion, parsley and tarragon. Fold in the potatoes and bacon. Adjust seasoning with sea salt and pepper. May be served slightly warm or at room temperature.

Apricot-Peach Cobbler:
5 apricots, pitted and sliced
5 peaches, pitted and sliced
1 C oats
3/4 C. brown sugar
1/4 C. unbleached flour
1 stick butter

Pre-heat oven to 375 degrees. Place sliced fruit in a buttered baking dish. In a mixing bowl combine the oats, sugar and flour. Work in the butter with your fingers. Place mixture on top of the sliced fruit. Bake until golden brown and bubbly. May be served with ice cream or fresh whipped cream as a garnish.
