Eat Local! Vegetable Zucchini Lasagna with Roasted Potatoes and Blueberry Peach Parfait
Serves 8

4 large locally grown zucchini, thinly sliced
½ C. locally grown candy onion, finely chopped
½ C. locally grown green pepper, diced
½ C. locally grown broccoli, top only, chopped
½ C. carrot, grated
16 oz ricotta cheese
16 oz shredded mozzarella
3 C. tomato sauce

Preheat oven to 350 degrees. In a 9x13 baking pan, spread a layer of tomato sauce on the bottom. Layer zucchini slices over the tomato sauce, slightly overlapping them. Add about half the vegetables (onions, green pepper, broccoli and carrot) to form another layer. Spread ½ the ricotta cheese on top of the vegetable layer and sprinkle generously with about ½ the mozzarella. Repeat the layers above, starting with the tomato sauce, followed by the zucchini, vegetables and cheese. Bake for about one hour. Let sit for 10 minutes before serving.

Roasted Potatoes

8-10 locally grown red or purple potatoes, cut into wedges
1Tbsp. olive oil
1 tsp. dried oregano
¾ tsp. salt
½ tsp. paprika
Cooking spray
2 Tbsp. grated fresh Parmesan cheese

Preheat oven to 450 degrees. Then combine the first 5 ingredients in a large bowl; toss well. Arrange potatoes in a single layer on a baking sheet coated with cooking spray. Bake at 450 degrees for 30 minutes or until golden. Sprinkle potatoes evenly with Parmesan cheese, and bake an additional 2 minutes or until cheese melts.

Blueberry Peach Parfait

1-1/2 C. fresh peaches, peeled and chopped
¼ C. sugar
¼ C. unsweetened apple juice
½ tsp. ground cinnamon
1 C. heavy whipping cream
¼ tsp. vanilla extract
1-1/2 C. fresh blueberries

In a small saucepan, combine the peaches, sugar, apple juice, cinnamon and salt. Bring to a boil. Reduce heat; cover and simmer for 6-8 minutes or until peaches are tender. Let cool. In a blender, process peach mixture until smooth; transfer to a small bowl; cover and refrigerate. Just before serving, whip cream until it thickens; add vanilla; beat until soft peaks form. Fold into peach mixture. In cups, layer blueberry then peach-cream mixture alternately.
