Staff Salsa Contest Recipes

You can serve your favorite tortilla chips with all of the following salsa recipes:
GREG’S SALSA
4 tomatoes, diced
1 onion, diced
½ C. green onions, chopped
2 serrano peppers
2 tomatillos, chopped
¼ yellow bell pepper
¼ green bell pepper
¼ garlicclove
½ C. cilantro, finely chopped
2 jalapenopeppers
2 pinches each salt&pepper
1 tsp. vinegar
Juice of 1 lemon
Combine all the ingredients except vinegar and lemon juice. Squeeze vinegar and lemon juice on top of salsa and chill for 3 or more hours.

“SUPER” FRUIT SALSA
2 mangoes, chopped
1 pint blueberries, chopped
6-8 tomatillos, chopped
½ medium red onion, chopped
1 jalapeno, minced
2 cloves garlic, minced
½ bunch cilantro, chopped
1 package “Field of Greens” by Vibrant Health
2-3 Tbsp. Barlean’s Total Omega Berry Swirl
Splash of balsamic vinegar
½ tsp. cumin
Salt & pepper to taste
Zest & juice of 1 lime
Mix all ingredients in a bowl and chill.

FIESTA SALSA
1 C. tomatoes, finely chopped
1 C. pineapple, finely chopped
¼ C. onion, finely chopped
2 Tbsp. garlic, finely chopped
2 Tbsp. red bell pepper, finely chopped
½ C. (packed) shredded jicama
2 Tbsp. cilantro, finely chopped
2 Tbsp. jalapeno pepper, finely chopped
1 mango, finely chopped
2 limes, juice & grated peel
1 tsp. salt
Mix all ingredients and chill. Great salsa for serving with cooked fish, but good with just tortilla chips too.

SPICY SALSA
1 can diced tomatoes
1 can fire roasted diced tomatoes
2 cans tomato sauce
1 red bell pepper
1 green bell pepper
6 Serrano peppers
2 Habanera peppers
6 oz. cilantro
Mix all ingredients together and chill.

MEDITERRANEAN SALSA
4 tomatoes
¼ white onion, diced
Cilantro, chopped (to taste)
1 large garlic clove, minced
Cumin (to taste)
Lime juice, freshly squeezed
Salt (to taste)
½ can black beans
Feta cheese (sprinkled on top)
Avocado chunks (on top)
Mix together the first 8 ingredients. Sprinkle the feta cheese and avocado chunks on top.

SUMMER SWEET & SPICY SALSA
½ C. jicama, cubed
½ C. lime juice
1/4 tsp. chili flakes
3 tsp. honey (to taste)
2 oranges, peeled & cubed
3 kiwis, cubed
2 C. sliced strawberries
1 can (14 oz.) small white beans
1 Tbsp cilantro, chopped (optional)
Slice jicama into narrow “matchsticks”; place in bowl. Stir in lime juice, chili flakes & honey. Let marinate while slicing and cubing the remaining fruits. Add fruit to the jicama mixture, stir gently and refrigerate overnight for maximum flavor. When ready to serve, top with chopped cilantro. For fun you could top with whipped cream or soy cream. Serve with Stacy’s Cinnamon Sugar Pita chips, vanilla wafers, sponge cake, tortilla chips or Nut-Thin crackers.

I don’t care about any contest, but I would like to share the recipe I made last night, and it was a good one!
Finely chopped celery stalks, not too big
two medium red onions finely chopped
2 sweet pickles finely chopped
a lot of fresh chopped cilantro, maybe 3/4 of a cup or more. can’t put too much!
About a cup of finely chopped purple cabbage! Makes is so beautiful
about 20 finely chopped roma tomatoes
fresh ground black pepper
splash or two of soy sauce
juice of one large lemon
some finely chopped leek, about one stalk is good
about 7 red chiles, finely chopped, be careful not to touch your face! Jalapenos are better, but we only get them at certain times of the year here.
I made a garlic pasted with about 20 cloves of roasted garlic in my mortar and pestle. I roasted the garlic in a little olive oil, sea salt and just a splash of balsamic vinegar, chopped chiles and fresh ground pepper.
Finely chopped roasted green or red bell pepper. I roasted them with the garlic. yummy!
I mixed in the garlic and peppers, and added a splash of red wine vinegar
mix well and serve. It’s a lot of stuff, but oh so worth it.
